Savage Jerky Charcuterie with Herb & Balsamic Tomato Jam

Ingredients: 

Various meats and cheeses, including Savage Jerky Beef and Bacon jerky. 
Various fruits and vegetables
Toast points, crackers or crusty bread
1 ball burrata cheese
1 package cherry or grape tomatoes 
1 Tbsp Savage Jerky Herb Blend
2 Tbsp balsamic vinegar
2 Tbsp extra virgin olive oil, divided
3 cloves garlic, minced
Salt and Pepper


Directions: 


Arrange meats, jerky, nuts, fruits, vegetables, etc. around a fresh ball of burrata or mozzarella cheese. Dust burrata with Savage Jerky Herb blend, drizzle with extra virgin olive oil and flaky sea salt (if available). 

Toast bread of choice (if using) with olive oil and season lightly with salt. Heat a large saucepan over medium heat, add olive oil and tomatoes, stirring occasionally so that tomatoes don't blacken on any side. After 3-5 minutes, tomatoes should begin to burst, releasing juices into the pan. Add garlic and Savage Herb Blend, continue to cook, stirring, for an additional minute- being careful not to burn garlic. Add balsamic vinegar, and with the back of a wooden spoon, smash tomatoes fully, stirring to incorporate with garlic and vinegar. 

Allow mixture to reduce to a jammy consistency over low heat (barely simmering). Allow to cool slightly and serve with crusty bread alongside prepared charcuterie.
