Hush Puppies with Savage Maple Buffalo Bacon, Whipped Brown-Sugar & Maple Butter

Ingredients: 

  • 1 1/2 cups medium, stone ground cornmeal 
  • 1/2 cup all-purpose flour
  • 1 1/2 teaspoon Kosher salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon granulated sugar
  • 1/2 small yellow onion
  • 1 large egg
  • 1 cup buttermilk
  • 4 cups vegetable oil, for frying
  • 4 tbsp salted butter
  • 2 tbsp maple syrup
  • 1 tbsp brown sugar
  • 1 bag Savage Jerky Co.® Maple Buffalo Bacon Jerky

Instructions:

Butter: 

Whip together butter, maple syrup and brown sugar, set aside.

Hush Puppies: 

Grate half yellow onion, combine with buttermilk and large egg, whisk to combine, and set aside. 

In a medium bowl, whisk together flour, cornmeal, kosher salt, baking soda and sugar. Finely chop Maple Buffalo Bacon Jerky and combine previously mixed wet & dry ingredients and whisk well. Set aside while oil comes to temp, approximately 15 minutes. 

Add vegetable oil to a Dutch oven to a depth of 1 to 1 1/2 inches, heat over medium-high heat to 365º. Drop batter in oil using a small ice cream scoop or spoon, 3-5 at a time and fry until golden brown on all sides, approximately 4-5 minutes and immediately drain to a plate lined with paper towels. 

Serve hush puppies alongside maple butter for dipping, piping hot.
