Bacon, Swiss and Spinach Stuffed Chicken Breast

An easy lunch or light dinner, this stuffed chicken breasts comes together in under 30 minutes with minimal effort and ingredients.

Ingredients: 

Directions: 

Pre-heat oven to 350º. Place chicken breasts between two sheets of plastic wrap and using a meat mallet or heavy bottomed pan, flatten to 1/4" or as flat as possible without tearing the meat. Season chicken with salt, pepper and Herb Blend

Place several slices of bacon jerky in the center of each breast, followed by cheese and spinach. Beginning at the narrow end of each breast, roll tightly and secure with either butcher's twine or plastic wrap and refrigerated for 30 minutes. 

In an oven-safe pan, heat oil and butter over medium-high heat. Once oil is hot, place each rolled breast in and sear on all sides until golden, approximately 3 minutes per side. Immediately place in pre-heated oven and cook for 10 minutes. Increase oven to broil and cook for an additional 5 minutes, or until chicken is golden and internal temperature reads 165º. 

Rest chicken for 5 minutes, slice into rounds and serve immediately.
