This Habanero Mojo Jerky breakfast casserole is spicy, savory, and protein packed! Who's ready to level up breakfast?
Ingredients:
- Habanero Mojo Beef Jerky (chopped)
- 1lb pork sausage
- 12 large eggs
- 1 red bell pepper
- 2 cups half and half
- 8oz sharp cheddar cheese (shredded)
- 8oz pepper jack cheese (shredded)
- 24oz hashbrowns (shredded)
- 1 tsp onion powder
- 1 tsp black pepper
- 1 large scallion (chopped, garnish)
Directions:
Preheat oven to 350°F. Heat a large skillet over medium-high. Cook sausage and stir often to crumble until browned. Transfer to a plate or container to cool. Leave sausage grease in the skillet. Add bell pepper and cook over medium until tender. Stir often for 3 to 4 minutes. Transfer to plate with sausage. Whisk together eggs, half-and-half, onion powder, and black pepper in a bowl until fully combined; stir in sausage, Habanero Mojo jerky, bell pepper, Cheddar cheese, and pepper jack cheese.
Lightly coat a 13- x 9-inch baking dish with cooking spray. Spread hashbrowns in an even layer. Pour egg mixture over hashbrowns and press the mixture to submerge hash browns in an even layer. Bake in oven until eggs are set in center and hash browns are golden brown, about 45 minutes. Let stand 15 to 20 minutes before serving. Sprinkle with scallions and serve.
