Umami Zing Sugar-Free Spring Rolls with Thai Peanut Dipping Sauce

 

A light and easy dinner for two on any occasion. Chicken, cheese, AND jerky. What's not to love?

 

Spring Rolls

Ingredients:

  • 1 package Savage Jerky Umami Zing Sugar Free Jerky, chopped
  • 1 package rice paper spring roll wrappers
  • 1/3 package rice noodles, cooked to package directions and cooled
  • 1 carrot, peeled and sliced into thin sticks
  • 1 English cucumber, peeled and sliced into thin sticks
  • 1 bunch mint leaves, chopped
  • 1 bunch cilantro leaves, chopped
  • 1 bunch basil leaves, chopped

Directions: 

Prepare rice paper rolls according to package directions (soak in cool water for 15 seconds), place on a tea towel and blot dry. Layer chopped jerky, rice noodles, vegetables and herbs in center of wrapper, then tightly fold the bottom and sides over ingredients and roll to top.

 

Peanut Sauce

Ingredients:

  • ¾ cup sugar free peanut butter
  • 3 tbsp low-sodium tamari sauce
  • 1 tsp freshly grated ginger
  • 2 cloves garlic, grated
  • 1 tbsp lime juice
  • 1 tsp crushed red pepper flakes
  • Warm water, as necessary

Directions: 

Combine all ingredients in a small bowl and whisk to combine. Add warm water as needed until desired consistency is achieved.
