Savage Bucatini Carbonara

 

A delicious (and quick!) twist on an Italian classic, this creamy Carbonara takes full advantage of our flavor-packed bacon jerky to create incredible results in less time! We're sure this dish is one you're going to want to make time and time again.

Ingredients

  • 1 bag Savage Jerky uncured bacon jerky, diced*
  • 1/2lb Bucatini Pasta
  • 2 large egg yolks
  • 2 large eggs
  • 1 cup parmesan cheese, plus more for garnish
  • 1 tbsp olive oil
  • Salt

Directions

Bring a medium saucepan of water to a boil, season well with salt. Cook pasta to al dente per instructions, typically around 7 minutes. Drain pasta, reserving two cups of the pasta water and set aside. In a large bowl add eggs, egg yolks and cheese and whisk thoroughly until mixture is cohesive, set aside.

While pasta cooks, place a large, high-walled pan over medium-low heat. When pan is hot, add a tbsp of olive oil and bacon jerky to pan. Warm bacon through, approximately two minutes, being careful not to burn. Remove bacon from pan and set aside, remove pan from heat. Add pasta and 1 cup pasta water to hot pan, stirring to combine, until pasta water has mostly evaporated. SLOWLY stir in cheese and egg mixture, being careful to not scramble. If necessary, thin sauce out by adding a tbsp of pasta water at a time, stirring continuously until a rich, glossy sauce forms.

Add reserved bacon to pasta and stir to combine. Serve immediately with additional parmesan cheese and an optional fresh, raw egg yolk.
